Nicholas Heneghan

Nicholas Heneghan was promoted to Head Sommelier at Ashford Castle in August 2026, marking the pinnacle of his 28-year career at the five-star luxury hotel in Cong, County Mayo. A Mayo native, Heneghan joined Ashford Castle in 1998 and spent his first six years in food and beverage service as Chef de Rang, while also working across room and lounge service.

He transitioned to the castle's renowned sommelier team 22 years ago, steadily progressing through the ranks, and for more than 11 years served as assistant head sommelier before his promotion. A key figure in the development of Ashford Castle's world-class wine programme, Heneghan led the move to the estate's new wine cellars in 2015, where he curated and organised the collection, which now holds more than 600 wines. He has also continued to expand his own expertise through WSET training and specialist masterclasses covering renowned wine regions including Bordeaux, Mosel and Champagne.

Throughout his career, Heneghan has mentored and trained numerous sommeliers, many of whom have gone on to successful careers in leading hospitality establishments internationally. The historic 16th-century cellars have been transformed into a luxury wine tasting and private dining venue.
